The uniqueness of Trittico comes from its special structure: made of one upper vertical chamber where the pasteurization begins, and one lower horizontal chamber, where the pasteurization phase is completed and the mixture is frozen. The two independent chambers can work simultaneously, allowing the artisan to carry on two different processes at the same time. In fact, while the mixture is freezing, it is possible to start a new production cycle of a different product.

    The Pizzeria line has a wide range of modular models in neutral and chilled versions, with a depth of 70 cm, allowing many different combinations to ensure an organized and efficient work space.

    The units are made entirely in Cr-Ni 18/10 AISI 304 stainless steel mounted on adjustable feet and comply fully with hygienic standards. The work tops are made from Sardinian granite or Cr-Ni 18/10 AISI 304 stainless steel. The drawers are suitable for housing 70×53 trays, with a capacity of 20/25 dough balls per drawer. The practical and functional drawers are set on stainless steel runners and are easy to remove for thorough cleaning. All the units are assembled on adjustable stainless steel legs, and stainless steel or galvanized castors can be supplied on request. The refrigerated glass display cabinets are made from Cr-Ni 18/10 AISI 304 stainless steel throughout, complete with protective glass sneeze guard. They are suitable for housing Gastronorm containers made from Cr-Ni 18/10 AISI 304 stainless steel or polycarbonate, and are fitted with their own independent cooling system.

    BRAVO Mix Cream




    Mixcream is a cream cooker of the latest generation that allows the production of many pastry products. Perfect creams thanks to the innovative agitation system that reproduces the Pastry Chef’s movements. A special junction of the “sail” blade, thanks to a particular spring, allows the production of extremely soft and smooth creams with no lumps. At every turn of the stirrer, the mixture is pushed towards the tank wall by the “sail” blade and becomes more and more refined. The scraper then collects the residual cream from the tank wall and put it in circulation again for further refining.

    Smart cooling thanks to the cooling surface of the tank split in 2 sections. This allows an automatic (or manual) total or half cooling: the result is the smoothness in the cooling of the egg cream and the same high quality also for low quantity of the product inside the tank. Furthermore, thanks to the Bravo’s patented use of speed variators of the latest generation the machine manages the mixing speed of the cream in accordance with the cream features.
